Spinach and feta brownies that balance your blood sugar!

What is the key to easy weight management, sustainable weight-loss, improved sleep, maintaining consistent energy levels, regulating your hormones, your best brain health, and reducing mood your swings? Simply put, it is the art of managing stable blood sugar levels. 

Not consuming enough macronutrients, experiencing high levels of stress, inconsistent mealtimes, and poor sleep can all contribute to imbalanced blood sugar levels. It’s important to eat a balanced combination of protein, fat, fibre and complex carbs (also high in fibre) at each meal to support stable blood sugar. The following recipes is a great blood sugar balancing meal that delivers all the elements of blood sugar balance. Its also so easy to make, and delicious as well as family friendly, and budget friendly.

So without further adieu, below is the recipe, happy cooking.

Spinach and feta brownies with cheddar cheese – recipe

Serves 4-6

  • 300g of baby spinach
  • 200g of cheddar, grated
  • 100g of feta, crumbled
  • 4 large eggs, beaten/ whisked
  • 300g of full fat plain or Greek yoghurt
  • 100g of chickpea (chana/ garbanzo bean) flour
  • 1 teaspoon of bicarbonate of soda
  • 1 teaspoon of salt
  • 1 tablespoon of butter or coconut oil
  1. Pre heat the oven to 180 degree Celsius. Next, sauté the spinach until fully wilted, and then drain the excess liquid from them away.
  2. Beat/ whisk the eggs and yoghurt together, set aside.
  3. Mix all the dry ingredients together in a large mixing bowl (chickpea flour, salt and bicarbonate of soda).
  4. Now add the egg & yoghurt mixture to the dry ingredients, along with the sautéed and drained spinach and mix well.
  5. Lastly add the grated cheddar and crumbled feta, fold it though the mixture, and then transfer to a buttered (fairly deep) oven tin/ baking tray.
  6. Bake for 20-25 minutes and then remove from oven and allow to cool for 5 minutes before serving with a tomato & cucumber salad (dressing of your choice) or a coleslaw salad – or both!
