My Eggs & Greens Brunch, is a brunch I can highly recommend to enjoy twice per week as part of my 2 meals per day eating plan for blood sugar and hormone balancing, with the additional benefits of digestive healing, weight loss and more energy and better mood.
Recipe:
- 2-3 large Eggs (organic/ pasture raised) I like Eddie’s Eggs
- 1 cup of chopped frozen spinach
- 1/2 cup baby peas
- 2 spring onions finely sliced
- Pink salt (for extra minerals)
- 1 tablespoon each (grass fed) butter & cold pressed coconut oil (the good fats are an important part of this blood sugar and hormone balancing brunch.
Simply sauté the veggies all together for a few minutes in the fats, then transfer them to your plate and in the same pan scramble the whisked eggs, seasoning well with pink salt and freshly ground black pepper for extra antioxidants
